My soon-to-be three-year-old has asked me for a “bananas on peanut butter toast cake” for her upcoming birthday, so I am SO glad I found this recipe. It is literally THE Best Thing Ever. Erica from Coffee and Quinoa was NOT exaggerating when she wrote that we would want to bathe in the banana icing. Sinful.
I’ve done a few test batches, since I’m making a cake, not cupcakes. The first try I found that the cake came out a little dense to my taste. The second batch I replaced the egg with a mashed banana, and it came out with a wonderful light texture. Pear Girl will definitely not be disappointed! (She and other party goers may, however, go into sugar shock from excess consumption).
