I wrote in the ingredients as I like to make it, but I usually end up using whatever vegetable is “on it’s way out”. In that regard, it’s a perfect recipe to pull together the day before grocery shopping! Don’t have any ground beef on hand? I’ve also made this recipe with a chickpeas and black beans in lieu of the beef, and it was amazing.
Have some sauce left over at the end of this meal? Recycle it into tomorrow’s lunch, and serve it over some whole-grain fusilli!
Jessy's LOADED Sloppy Joes
Super easy to throw together, Sloppy Joes are perfect for weeknights! Overflowing with vegetables, this quick comfort food becomes a wholesome, healthy meal.
Ingredients
- Hamburger buns, one per person.
- 1 lb Ground Beef (or 1 can Chickpeas and/or Black Beans, well-rinsed)
- 1 large Onion
- 4 Garlic cloves, minced
- 2 large Red Potatoes, cubed
- 3 Carrots, sliced
- 4 branches Celery, diced
- 1 box (227g) white mushrooms
- 1 can crushed tomatoes
- 2 tbsp ketchup
- 1 tbsp brown sugar
- oregano/thyme/salt/pepper to taste
- sharp cheddar for garnish
Directions
In a large pot over medium heat, cook the garlic and onion until the onion starts to become transluscent. Crumble in the beef, and cook through. Add in the rest of the vegetables, and cook until the carrots begin to soften. Stir in the tomatoes, seasonings, ketchup, and brown sugar: bring to a boil, then reduce heat and simer for 30 minutes.Personally, I prefer my hamburger buns toasted and buttered, as they get less soggy under the sauce, but they can also be used plain and/or unbuttered.
Place a hamburger bun on each plate, then cover with a generous heaping of the sloppy joe sauce. Grate some sharp cheddar on top, and serve.
